Cá bạc má kho cà chua sẽ không khiến bạn bạn đứng trực tiếp quá lâu bên nồi cá kho để canh chừng đâu nhé! Sau khi tẩm ướp và cho cá vào nồi rồi đun theo hướng dẫn, bạn vẫn có thể bỏ đó để đi làm nhiều món ăn khác cho bữa cơm.
Cá bạc má lựa con da óng ánh, mắt trong, mang đỏ, thịt cá chắc. Cá mua về làm sạch, để ráo. Đầu hành lá đập dập, ớt giã nhuyễn cho vào thố cá, thêm đường vào ướp khoảng 10 phút cho cứng cá. Sau đó cho nước mắm, muối, dầu ăn và tiêu vào, ướp 1 tiếng đồng hồ. Cà chua băm nhỏ.
Đun nóng 1 muỗng canh dầu điều, cho cà chua vào đảo sơ, trút hành ớt hỗn hợp nước ướp vào xào khi chuyển mà hơi vàng cánh gián, xếp cá vào, đổ nước lạnh vào sao cho nước xâm xấp qua khỏi con cá 1 tí, kho lửa nhỏ tiếp tục trong 2 giờ, nếu cạn có thể châm thêm nước, nêm nếm nước mắm đường muối cho vừa ăn. Không cần trở cá, khi cá chín nước kho keo lại vừa ý thích là được.
Khi cá bắt đầu kẹo lại, có thể cho nước dừa xiêm (hay nước mía vào). Nhớ gia giảm đường cho đừng ngọt quá nhé!
Bày trí cá kho ra nồi đất cho đẹp mắt dùng với cơm nóng rất ngon. Món ăn này mà dùng vào những ngày mưa thì đưa cơm cực kỳ.
