Làm sạch gà, cắt nhỏ rồi ướp với 1/2 muỗng cà phê muối và 1/4 muỗng cà phê tiêu.
Cho dầu ôliu vào chảo, sau khi dầu nóng cho gà vào, để yên khoảng 1-2 phút đến khi gà chuyển vàng nâu, thì đảo cho chín đều rồi cho ra đĩa.
Rau chân vịt rửa sạch, để ráo. Bắc một nồi nước lên bếp, đợi sôi cho nui vào luộc chín, vớt ra dội nước lạnh để nui không dính vào nhau.
Giảm bớt lửa và cho tỏi băm vào phi thơm. Kế đến, cho rượu vang trắng và nước dùng gà vào, khuấy đều. Đồng thời, rắc 1/2 muỗng cà phê muối và 1/4 muỗng cà phê tiêu lên cà chua bi đã cắt đôi.
Tiếp theo, cho rau chân vịt, cà chua bi và gà trở ngược vào chảo nước sốt. Sau đó cho nui vào chảo, đảo đều cho thấm vị.
Rắc lên ít phô mai Parmesan và trộn đều. Cuối cùng chỉ việc cho nui xào gà ra đĩa và dùng nóng.
